Quick and tasty warm roasted brussels sprout salad!

Sometimes when I get home I’m ravenous!  I get blindsided by the hunger pangs and just want to start shoveling pita chips (which I don’t keep in the house for that reason) into my mouth!  Try out my quick and fulfilling salad for dinner.  While it’s still 40 degrees in Seattle salads don’t always feel like a complete meal at night there is an element of warmth… This one is for my veggie friends!  Drum roll please….. ROASTED BRUSSELS SPROUTS!  🙂  Don’t knock them till you try them!  Seriously I had prejudged these little round smelly veggies until I was persuaded to give one a shot.  I’ve been singing their praises ever since!  My favorite way to prepare brussels sprouts is to preheat the oven to 400 degrees, cut the brussels sprouts in half, melt 2 spoonfuls of coconut oil and…
